Ingredients:
1 mango, diced
1 cucumber, diced
1/2 red onion, diced
1/4 cup fresh cilantro, diced
1/4 cup olive oil
Juice from 1 lime
2 Tbsp. apple cider vinegar
1 jalapeno pepper, seeded and minced
Celtic sea salt and freshly ground pepper
Instructions:
In a small bowl, whisk the olive oil, lime juice, apple cider vinegar and jalapeno; season to taste with salt and pepper.
In a salad bowl, combine mango, cucumber, red onion, and cilantro.
Mix all the contents together and enjoy!
